Today I got to hang out with my beautiful daughter who is a vegan studying to be a nutritionist.
Jasmine appreciates how important a well balanced diet is for our children. She believes as adults, we need to be positive role models for the children in our lives and I wholeheartedly agree with her.
She is creating a deliciously – rustic, wholesome menu for our Nature Art Weekend in August.
Jasmine chose to become a vegetarian in her early teens and just recently turned Vegan. I am so thrilled to have her work on the menu. We wish to use as much local organic produce in our menu as possible.
Here in the beautiful Okanagan we are very fortunate to have an abundance of fruit growers and several organic farmers, a favourite being Westwood Organics
Here are a few ideas we are thinking about…
Beetroot and Kale Salad
We both have a passion for chocolate but we are keeping it Vegan and super healthy…
Raw Matcha Balls
Raw Chocolate Apricot Brownies
So we think we have Saturdays menu worked out. Leaving us with Friday and Sunday’s menu to work on – yeah!
Saturday 5th August
Breakfast – smoothie bowl topped with fresh nuts, seeds and local peaches
Lunch – sweet potato fries with hummus and beetroot sandwich on rustic bread
snack – homemade guacamole with tortilla chips
snack – raw matcha balls
Dinner – chickpea and coconut curry with salad
Desert – raw mocha cheese cake (vegan)
We will share a short video featuring some of the local producers and the final weekend menu later in July…watch this space!
On Saturday evening we will visit Ancient Hill Winery in Lake Country…they have the most adorable picnic garden where you can enjoy their amazing wines!
